Chicken Burritos!

RATING: Happy.  I always love burritos.

Last night’s dinner!

Hamburgers with Garlic served with French Fries

RATING: Exultant!  This was the first time we chopped up garlic to mix with the meat before cooking and it was so delicious!  I don’t know why we never did it before!

Hot Dogs with Mango/Jalapeno Chutney

(Koen’s plate - one with ketchup and the other with mayo/mustard.  I ate mine with just the chutney.)

RATING: Enthralled.  I really loved it!  The flavors really worked well together.

This is last night’s dinner.  The night before we ordered pizza from Papa John’s because they have $5 large pizzas on Tuesdays!

Lasagna with Zucchini with Insalata Verde with Vinaigrette

(Look at all the steam!)

This is also our dinner tonight!

RATING: Content.  I liked it, not loved it.  Koen makes the best lasagna, but this was the first time with zucchini and I found out I love it less.

Tonight I made dinner, but it seemed more like brunch, but dinner-size portions.

Broccoli and Onion Quiche served with a Romaine Salad with Olive Oil and Balsamic Vinegar

Very messy!

RATING: Happy.  It just felt weird eating it for dinner.  But I was craving it!

SALADE LYONNAISE (salad with apples, bacon, poached egg, and a mustard vinaigrette) with rosemary potato bread

RATING: On cloud nine! But of course I’m happy - this is my favorite salad.

Lo Mein with Bok Choy and Green Onions (served with egg rolls and a homemade sweet chili dipping sauce)

And to add to our dining room is our wedding present from/by Christina!  And I realize you can see me in the lower corner.

RATING: Blessed.  No really, I looked up synonyms to happy and that was listed. The lo mein was so delicious and spicy!  The egg rolls would have been better fried, not baked, but the dipping sauce was sooo good.

Lunch and Special Guest Judge Edition

Salmon on top of Rosemary Potato Bread with Spinach, Honey Mustard sauce and Hollandaise with Poached Eggs

For THREE people!  Christina!

RATING: Very, very happy!  Great flavors.  I loved the honey mustard sauce with everything the best.

CHRISTINA’S RATING: ELATED. A light and superbly delicious meal. The fish was perfectly seasoned and the egg was a delightful and suprisingly tasty addition. Hollandaise, excellent; honey mustard, excellent; company, perfect.

Salad.

Tonight I actually made dinner, not Koen. I just copied Christina’s famous salad, haha, but changed it a little.

Spinach Salad with Strawberries, Crumbled Gorgonzola, and Walnuts with a Honey Mustard Balsamic Vinaigrette

We also had leftover olive bread from last night.  Koen had it with olive oil, salt, and pepper, and I spread butter and garlic on mine.

RATING: Happy, but I think the flavors were a little off.  Maybe if the blue cheese was changed to goat cheese (or feta like Christina).  Or maybe if we kept the blue cheese and switched from strawberries to pear.  I liked it, but I don’t think I’d do that combination again.

Dinner tonight!

I always joked about making a blog about what Koen makes me for dinner and now I actually created one.  So..for dinner tonight:

Baked Tilapia with Lemon, Basil, Cherry Tomatos, Garlic, Capers, Onions, and Mozzarella

Before:

After baking:

Served with Crusty Morrocan Olive Bread - Koen ate it with olive tapenade, and I spread one of the cooked whole cloves of garlic on each slice with a little butter.  Mmm Mmm.

To go with the fish and bread, we had a simple salad with olive oil and balsamic vinegar.

And as for a rating system, I guess I’ll judge it by how happy I am after.

RATING:  Ecstatic!  It tasted a little like spaghetti to me, because of the cooked tomatos, basil, and garlic.  So much flavor!
